Sous Vide Method

Cooking the perfect steak (or chicken) is a skill mastered by few, though eating the perfect steak is a passion shared by many. There’s something that feels special about knowing you’ll be enjoying a steak cooked to perfection - whether you have reservations at your favorite restaurant, dinner plans with a talented friend, or a cut in your refrigerator waiting to be prepared by your own skilled hands.

Sous vide is the art - and science - of cooking beautiful cuts of meat in a vacuum package at a low temperature for a long period of time. And here at Calvetti, it’s one of our signature styles that we use daily to deliver you the dinner you deserve.

The water your meal cooks in can be regulated to two-tenths of a degree by the skilled Calvetti chefs, and all the moisture is retained in the pouch as it cooks for a succulent fine dining experience. Whether it’s your first steak with us or your three hundredth, our proprietary method allows us to prepare every steak perfectly, every time - for unparalleled consistency that arrives cooked and ready for you to simply heat, serve, and enjoy.

Cooking instructions

Stove: For best results, refrigerate product 24 hours prior to cooking. Add water in a Large Sauce Pot and bring to a simmer (180-200 °F). Place product in plastic pouch into the simmering water. Keep the product in simmering water for 15-20 minutes. Times may vary so check that internal temperature of is 160 °F. Remove on to plate. Let rest for 1 min.

Oven: For best results, refrigerate product 24 hours prior to cooking. Preheat oven to 350°F. Remove product from vacuum package. Wrap short ribs in foil and place product in oven safe dish and place in center of the oven for 18-20 minutes. Remove from oven. Let rest for 1 minute before serving.

Microwave: For best results, refrigerate product 24 hours prior to cooking. Cut a small slit into top of the pouch and place product in plastic pouch on a microwave safe dish and cook on high for 3-4 min. Remove from microwave and let rest for 1 min before serving. To serve, remove product from pouch by cutting the edge of the bag and pouring the contents out into a dish. If Product is Frozen Cook for 3 min turn product 180° and continue to cook for an additional 4 min.
